In 2017, we lost not only the guild President, but our friend. We have embraced Jim's motto to "Do Good" and will be using his memory to pass it forward. We have designed a Peated American Single Malt Whiskey to fund a scholarship program to further the advancement and education of the industry. Our goal is to distill at least 500 bottles and place them in the hands of those who appreciate the craft and will share the spirit in good memory.
The project kicked off at Sutherland Distillery in Livermore, California. On August 20, 2018, we began fermentation, and distillation took place on August 24, 2018. The grain was imported from the United Kingdom and will provide a wonderful deep flavor that will age wonderfully in California's climate.
We have had the grains donated by Great Western Malting, barrels donated by Titan Barrel Works, time and labor by many members of the guild, and many others along the way.
The barrels that will be used are unique in style and in taste. They are stainless steel shells with American Oak wood heads and Japanese Mizunara internal staves. This will create an unparalleled finish that we hope represents Jim well.
Barrels are now being scheduled to tour through the distilleries who are members of CADG. The plan is for the 2 barrels to visit as many members as possible to take advantage of the movement, unique weather and provide opportunity for all areas of California to hear the story.
When the whiskey is done aging, we will be bottling the project to then sell to the public. This will be a fundraiser to start a new scholarship fund to assist students studying California distilling. We are still in the process of working out details on this, but that is our plan.
